Boy, I sure have been busy in the kitchen lately. I feel like I’m always doing some sort of prep for the next meal. Planning ahead makes it so much easier for me to make healthy meals, though.
Also, I’ve started waking up earlier so I have some more time in the mornings to putz around in the kitchen. Please tell me I’m not the only one who makes hummus at 7 a.m.?
In this post, I thought I’d take a moment to share my updated, vegan green smoothie recipe. I used to make it with yogurt. Then, when I became vegan, I started using soy yogurt. But, since starting Dr. Fuhrman’s Eat to Live Holiday Challenge, I wanted to cut out the added sugars so I dropped the soy yogurt from the recipe.
I make several versions of this recipe now. Sometimes I use raw greens and sometimes I lightly steam them. My favorite version is with steamed simply because the greens taste less bitter to me and they fit in the blender much better, too!
I use a Vita-Mix but you can use a regular blender, too. You might need to cut down the portions by about 25% to fit in a regular blender.
Energizing Green Smoothie – Serves 4
Ingredients:
4 cups steamed greens (I use chard, kale and spinach)
1 frozen banana
2 cups mixed frozen fruit (strawberries, mango, papaya, pineapple)
3 cups unsweetened soy or hemp milk
8 prunes
5 dates
1 tablespoon ground cinnamon
1 tablespoon oat bran
2 tablespoons hemp protein powder
2 tablespoons flaxmeal
Directions:
Place greens in a large glass bowl and rinse thoroughly with water. Steam in the microwave for about 1 1/2 minutes. In a Vita-Mix or blender, combine the rest of the ingredients. Use tongs to add the steamed greens. Process until smooth.
