After eating so many salads and bean soups during the Eat to Live Holiday Challenge, I was craving the texture of a burger yesterday. A lentil burger, that is. I’ve posted a similar recipe before, but I made this version without an egg so it is vegan. I also baked the burgers to save some fat and they turned out great!
Turns out that a tablespoon of ground flaxseeds with three tablespoons of water (mixed in a food processor) makes for a wonderful egg replacer. Who knew? Awesome.
Vegan Lentil-Mushroom Burgers – Serves 6-8
Ingredients:
1 cup dried lentils
1 tablespoon ground flaxseed
3 tablespoons water
3 small portobello mushrooms or 1 large one
1 small onion
1 garlic clove
1 teaspoon chili powder
1 tablespoon ground cumin
Directions:
Rinse lentils and pick through for any debris. Place lentils in a medium saucepan and cover with about an inch of water. Bring to a boil and simmer covered for about 30 minutes until water is absorbed. Set aside to cool.
Preheat oven to 375 degrees. In a food processor, combine ground flaxseeds and water. Whirl until thoroughly combined. Then, add all of the other ingredients and pulse until combined. Add an additional tablespoon of water if needed. Form patties and place on a baking sheet. Bake for 25 minutes total, flipping once during cooking.
P.S. Some people have been asking me what kinds of meals I’m eating during the challenge. The one pictured above is from dinner last night. I think it’s pretty close to Dr. Fuhrman’s recommendations because there is a fresh salad with chopped veggies, the burger with shredded carrots on top of one piece of no-sodium bread and a kiwi for dessert. Ohhh, now I’m hungry!

I used your recipe for dinner tonight. Me and my parents really enjoyed it. I made some polenta to go with it to act as the bread, and a grated beetroot and carrot salad with an improvised dressing – coconut cream and tahini. It was delicious and I think I’m too full for dessert
I’m 19, a recently turned vegan from vegetarian and have lately been interested in cooking – I used to only do baking but cooking is actually quite fun especially when you find a tasty recipe to try out. Thanks for sharing this one
