Vegetable Detox

I like making a good stir-fry for dinner at least once a week. My step-by-step guide for how I make it is here. Even though there is a decent amount of prep work to get the veggies ready, it’s not overly time-consuming. I usually have leftovers from my stir-fry for lunch the next day, too.

After eating out when I was in San Francisco earlier this week, I felt the need to make a veggie-filled meal to help get me back on track with healthy eating. I try to eat healthfully even when traveling, but boy is it hard! I had several meals out and know that my sodium intake was probably through the roof.

I decided to make this stir-fry without rice to ensure that the bulk of the meal was vegetables. I got the baby bok choy, onions, tofu, garlic and mushrooms from Trader Joe’s and found the baby broccoli at my local farm stand:

I made the world’s simplest peanut butter stir-fry sauce using a tablespoon of unsalted peanut butter, a teaspoon of rice wine vinegar, a teaspoon of reduced-sodium soy sauce and about a 1/4 cup of balsamic vinegar. I just mixed it up with a spoon:

By the way, this is the first wok I’ve owned and I got it at Ikea recently for about $25. It’s cool looking, don’t you think? It even came with a lid which I love. I am really happy with it so far. After the vegetables are soft, I just drizzled the peanut butter sauce on top. I felt so much better after eating this veggie-filled dinner. I was able to get to the gym several times this week and weekend, too, so I’m feeling back to my old self again.

I made a stir fry last night too gotta love loads of veggies for getting yourself healthy! I definitely rely on the gym, lemon/water/cayenne and greens to get back on track!

i think that’s a super meal you got there. i will try the sauce next time i cook. I just got a bunch of mizula and mushrooms… Keep posting :)

I’ve been making peanut sauces a lot lately, and I’ll make a big stir fry [usually throwing in some black beans with the veggies], and making rice or rice noodles on the side.

When I’ve been traveling a lot, I love to get back on track by eating lots of veggies and fruit. I’ll order and make lots of salads, drink smoothies, and get back into a routine.

A good breakfast usually sets my food mood for the rest of the day. If I eat a “bad” breakfast, then I usually have a difficult time getting back on track the rest of the day. Likewise, if I eat a super healthy/satisfying breakfast, I’m more inclined to stick to goodness for other meals.

I always crave lots of veggies too after indulgent meals. A stir fry like this is great, or an “everything that is left in the fridge” salad. Kale smoothies are always good too!

Probably a stir fry!!! LOL I am making one tonight, but with ham, too. My veggies are going to be zucchini, swiss chard(including leaves) and yellow grape tomatoes.

I will have to look for one of those wok’s at Ikea when I go to Florida in June. Hope it will fit in my suitcase!!

I love a good stir fry like that. As a raw eater, I have been on some intense detoxes. The best for me is just eating lots of raw foods.

For a minute I thought the title meant you were detoxing FROM veggies. I’ve done that too. :-) The peanut sauce looks great.

Hi! I found your blog from your comment on Oh She Glows. I just recently found out about this “water-sauteeing” concept from the McDougall diet. It’s interesting, I never knew it was even possible but the more things I cook that way, the more I wonder why I was using oil in the first place. A good stir-fry is one of my favorite ways to eat veggies. I also like to chop up a ton of veggies into a giant salad and take portions off of it throughout the week to take to work for lunch.

Hi Carrie,
I know what you mean about getting on track especially after vacations. I find getting back into a raw food routine for a day or two really helps, eating mostly fruit and salads and drinking plenty of water. your stir fry looks delish! sometimes I saute with white wine or broth too.
