As mentioned in yesterday’s post, I had a major road trip with my husband and two cats from our home near Palm Springs back to the coast. The cats travel fairly well, they each have a full-size crate with padding, a bed, blanket and a towel over the top to shield them from too much visual stimulation. Here’s Xena peeking out from her crate in the back seat:
Along with my Traveling Oat Cookies that I made for dessert with lunch, I made what I am calling a “Lazy Woman’s Kale Salad” for the main course. I made it faster than my Strangely Addictive Almond Butter Kale Salad because I didn’t use a Vita-Mix to make the dressing, I just mixed three ingredients in a bowl: almond butter, lime juice and agave syrup (note: I rarely use a concentrated sweetener such as this, but in this case it was for the purpose of convenience).
After I washed and quickly dried one bunch of kale, I pulled it off into pieces into a large bowl and poured the dressing on top. I then used scissors (you can also use your hands) to cut the dressing into the salad:
I cooked up some of Trader Joe’s new quick-cook organic brown rice (cooks in 12 minutes) and layered the kale salad on top along with a bell pepper and onions. I made one for me and one for Alan (his has some goji berries on top):
I packed the salads and the cookies into a cooler bag and we had a delicious, yet quickly made lunch on the road. My lap salad:
After several hours, I saw the ocean!
Lazy Woman’s Kale Salad – Makes 2 Servings
Ingredients:
1 bunch of kale, washed, dried and pulled off the stems into a large bowl
3-4 tablespoons unsalted, raw almond butter
4 tablespoons lime juice (or the juice from 2 juicy limes)
1 tablespoon agave syrup
Directions:
Mix together the almond butter, lime juice and agave using a spoon and pour dressing over kale. Use scissors or hands to mix the dressing into the kale. If possible, let sit overnight to marinate and soften. Serve over brown rice and top with chopped onions or other raw vegetables like a bell pepper.
