Good morning…I have so much to tell you! First, I am so unbelievably blown away with happiness by the number of bloggers participating in Healthy Vegan Fridays. We have 61 entries so far and the blog party doesn’t even close until tomorrow! I look at this as a MAJOR success and a confirmation that the interest in veganism, especially healthy veganism, is growing. That means nothing but good things for our bodies, our planet and the animals. My heart is filled with pride to know that you are all out there and we are connecting in this way.
If you’re still wondering about the blog party thing, I wanted to give you a few more details about how it works. The idea is that you’ll write a post with a relevant recipe for the blog party (be sure to read the entire rules here). After you’re done writing your post, you have just one extra step to get your post to show up on the thumbnail list of all the entries for that week. This step consists of clicking on the Linky Tool and entering your info. Here’s a screen shot of what it looks like:
See the part with the red arrow? That was the only confusing part for me. You’ll just want to make sure and enter the link of your post with your recipe here. Then, you just provide a title for your recipe and upload a photo and you’re done. I think it’s so cool how all the thumbnails show at the bottom of the posts on the hosts’ sites: mine, Shelby’s and Gabby’s.
If you need any other incentive to participate, this is a fantastic way for bloggers to get more people to your site who are actually interested in the topic. So, keep up the good work…I’m already starting to think about a recipe for this week!
Did you have a nice weekend? Alan and I are still in the midst of trying to sell our house at the beach, we had a brokers’ open house on Friday and then another open house yesterday. Can I just say how stressful real estate is? I think it has to do with the fact that 1. it’s your home so it’s automatically personal and emotional and 2. it’s a big financial transaction which automatically brings on stress. I’m doing the best I can to manage my expectations, though. Making sure I get plenty of exercise, sleep and relaxation time is really important for me right now (and, of course, continuing to eat healthy meals). I also try to put the whole thing into perspective and realize that it’s just one of life’s challenges, it’s not that big of a deal in the scheme of things.
I also can’t complain too much because we already have the house where we are moving to in the Palm Springs area. We drove here yesterday so our realtor can have free reign of the house we are selling for a few weeks. I said goodbye to the ocean as we made the 300-mile trek down the coast and then inland:
A few hours into the trip, we paused and had lunch that I brought with us, a kale salad with a simple dressing of tahini, lime juice, dates, onion and garlic. I served it over cooked quinoa and topped it with currants and onion:
For dessert, we had some leftover smoothie that I had made the day before. I made this smoothie a little differently by using freshly made beet, lime and carrot juice as the base (I stole this idea from Jasmin). It’s more work to juice the veggies before making the smoothie:

It definitely jazzed up the smoothie, especially the color! I kept the rest of the ingredients the same as my typical morning green smoothie, just subbed the veggie juice for the water.

It was pretty yummy, the juice definitely sweetened up the whole thing. In fact, I think I got a bit of a sugar rush from it. In the future, I might try using more of a green juice and adding it to just frozen fruit. I love this option though and want to experiment more.

That smoothie looks soooooooo delicious
We are on the other side of real estate right now…trying to buy a house. We put in an offer and they have until tomorrow to respond and the waiting has been torture! We are pretty sure they will counter offer anyway, but they are taking their time about it lol. This house has been on the market for several months so you would think that they would be eager to get the process going.

Wow! All of these recipes look great! I am new to this (not veganism but Dr. Fuhrman) and am quite impressed.
But I have had one BIG question for all. I understand onions have nutrients. However, I HATE raw onions with a passion. Even shallots! I have grown my own chives before but don’t know if they qualify.
So, is it ok to sautée the onions before adding them? In fact is it ok to sautee up a whole container to use through the week? Same with garlic – ok, I admit I like raw garlic sometimes, but not all the time.
Or – is there a substitute for onions?
If anyone knows the answer to this, please share. Thanks.

I have an answer to you that you’re going to like. You don’t need to eat your onions raw to get the health benefits. But, what you do need to do is to chop your onions at least 15 minutes before cooking them. This allows enough time for the protective compounds to form. Then, simply add the onions to the cooking process.

Hi, it’s Ruth again. I wanted to recommend my new blender. Vitamix is out of my league. My last blender though, was nothing to write home about as the motor blew right away.
So my friend, who belongs to Consumer Reports, and I checked out blenders there, and found that their best buy was number two on the list AND was under $60! It is the Master Prep Professional, QB1004 30/QB1004CO 30.
This Ninja has three containers to chop veggies and make smoothies. I just got it from Amazon last week, and could not be more pleased!
I have to have a smoothie every morning … Mostly fruit, almond milk, and soy protein powder. I don’t know if the soy powder is allowed, but it satisfies me until past lunchtime. I found it at trader Joe’s, and inexpensive frozen fruit too. But never again will I put frozen fruit into any blender – I just defrost those in the fridge overnight.
So, I have never had a blender like this Ninja in my life. And that it is three in one just makes it better and everything faster. Wow!
I just had to recommend it to everyone. And I got a great deal from Amazon too.
