Happy August! Wow, is this summer flying or what? I’m still taking my Medical Terminology course, but it’s very low-stress because it’s independent study. In fact, I started the course in January and just passed the half-way mark (I took a break from it during my ultra-busy spring semester). I’m hoping to finish it in a few weeks before I start my fall semester.
Thank you so much for all of your awesome comments on my post yesterday. I am beyond excited about developing an app with whole-food, vegan recipes and I will give you more and more details when they are available. I do want to mention that it’s not going to be any old recipe app, the developers have created very sophisticated software that has a lot of amazing features that I hope will be inspiring and collaborative for our community. This project is literally a dream come true for me and I just can’t wait to see how it unfolds (you can read the press release from the company I’m working with here).
Now onto the food! I’m participating in “What I Ate Wednesday” today (otherwise known at WIAW).
Here is everything I ate yesterday. For breakfast, I had some leftover smoothie with buckwheat groats on top:
Lunch included a collard wrap filled with rice, zucchini and onion and served with a side of sauerkraut and Gena’s herbed cashew cheese. Can I just say that this is the first time I’ve made cashew cheese and it totally blew my mind!?! I didn’t have any lemon juice so I just used apple cider vinegar. Oh. My. Goodness. The cheese takes seconds to make (outside of soaking the cashews for four hours) and addd the flavor and richness that my ho-hum collard wrap needed. You can see the cheese in the photo, it’s the white stuff on the right:
Lunch was served with a big ole slice of this:
Dinner was a simple green salad with avo, tempeh and zucchini:
I couldn’t resist making a blended fruit smoothie for dessert including nectarines from the farmers’ market, frozen blackberries and some coconut milk:
All in all, a very satisfying and healthy food day. As I get closer to attending Dr. Fuhrman’s Getaway, I’m starting to think about changing a few of my habits to eat closer to his standards. I know it sounds silly, but my worst nightmare is to meet Dr. Fuhrman and have him say to me, “you need to lose weight.” I know, I know, you are probably thinking “Carrie, you don’t need to lose weight,” but the stress of selling a house has increased some of my emotional eating habits and, consequently, I’ve gained back a few pounds from earlier this spring.
I’ll keep you updated on my changes and progress.

I added a dash of no-salt seasoning and it tasted like a mixture of ricotta and mozzarella cheese. I’m already starting to dream of how I’m going to use it next.
I ordered my cards from Moo.com. I hope to get to NYC sometime, maybe 2013(?) and we should def meet up then!
Herbed nut cheeses are the best. I have a good recipe from the 30 Minute Vegan cookbook that I’ve used for a couple years and it always turns out great. I highly recommend that book for those who want quick, healthy ideas.

Love your business cards! Fresh and colorful. Im in San Diego for a week at Optimal Health Institute enjoying raw food. Im a 3rd weeker and learning how to prepare raw foods. Today we made pizza and lots of crackers!!! Lucky you to attend Dr Fuhrmans Getaway!!!

I love cashew cheese…I made a lasagna with some the other night (Chef AJ recipe) and it was so good. Very rich and creamy, and I think much better than ricotta cheese!
Hi Shelby! I was wondering about baking with the cashew cheese. So it turned out okay? I guess it would negate the raw factor, but that’s okay with me. I was thinking about making a pizza with it. In regards to the weight loss thing, I have no idea what Dr. F is going to be like in person. He has been known to be more straight-forward as opposed to tactful and I have a few health-related questions for him. I just have a feeling that his first answer would be to lower my body fat, but we’ll see.

So excited for the App (how cool will that be?!)! I’ve been dealing with similar issues of getting into some bad habits (especially snacking when I get home from work) and probably have a couple extra lbs that I wish I wasn’t carrying around. I’ve been focusing on changing my eating habits over the past two weeks and have seen some good results already! I’ve focused on limiting my nut/seed intake and focusing on bulking up on fruits, veggies, and beans and it’s been working great.
Can’t wait to see and hear about your trip to the Fuhrman Getaway, beach + tasty, healthy food already made for you = one awesome vacation!

I find that I’m not eating because of hunger, but because of stress. So, I think I need to find another way to comfort myself, like reading a book or something comforting besides eating. Do you think you and NutriDude might ever come to a Getaway? I heard a rumor somewhere that next year’s might be in California.
NutriSister, love it!!!! We have thought about the Getaway before (NutriMom actually went last year), this year just happened to be about the same time we already had our big vacay planned. Gotta convince Dr. Fuhrman to have the Getaway in San Diego! I might not be able to pass it up then!

May I ask what specific eating habits you’re planning to work on before the Getaway? As someone in the early stages of following Dr Fuhrman’s recommendations (I’m 3 months in), I’m always beyond curious as to how others exactly implement it in their own lives, where they struggle, and how they work on those improvements.
Also, I’d love to know what you had in your morning smoothie! And what you did for your dinner’s salad dressing. I already LOVE WIAW!
Hi Rebecca! Well, my intentions are to cut back on dried fruit and overall trying to eat for hunger as opposed to comfort. I am pretty good about getting in enough fruits and veggies, but I still find myself eating more than I should when I am stressed. It’s a huge challenge for me based on old habits. My morning smoothie consists of hemp seeds blended with water and then frozen fruit plus a serving of greens like spinach or kale. I usually add some dates or stevia to sweeten and occasionally add things like tofu, cacao powder, macs powder, goji berries, etc. Each smoothie is different.
As far as my salad dressing, I usually make an avocado-based dressing by blending the avo, vinegar, dates, garlic, onion and a bit of soy milk.

I’ve never made straight up cashew cheese, but am thinking of trying it as kind of a nacho cheeze thing. Did you season yours with anything special?
I just used a no-salt seasoning and it was amazing. If you want to try a nacho cheese flavor, I would recommend using nutritional yeast. Let me know how it turns out!!!

Your eats are so healthy I seriously doubt he’s going to take any issue with your eating. Other than that it’s not very much food, but then again I know that I eat way more than a lot of people, so… Anyway, I need to try buckwheat groats, they look good!
