Good morning! I’m so excited that we are on our second week of Healthy Vegan Fridays. There ended up being a total of 63 entries including mine, Gabby’s and Shelby’s. So cool, right?
Without further ado, I want to announce the top three submissions for last week, in descending order. In 3rd place was the entry from Ali called Chocolate Kale Granola. Ali writes at the blog Farmers Market Vegan and I can’t wait to read more from this creative gal. Can you imagine…granola made with kale served in a kale leaf? Oh yeah, and did I mention chocolate? Brilliant!
The 2nd place entry was from Michele for her Roasted Sweet Potato + Black Bean Salad. I’ve made a salad similar to this one before, but it didn’t look this delicious:

And, finally…our top clicked-upon entry for the very first Healthy Vegan Fridays was … (drum roll, please) … Lou for her Breakfast Brownies and Jam entry!
Gosh, I’m salivating just looking at this picture. Lou is Australian (which automatically makes her cool and hip) and she has a great blog called Fridge Scrapings that I also just discovered this week. Plus, Lou has a really cute kid. Congrats, Lou!!! I really want to try making this jam using berries and chia seeds. So simple and lovely.
As a side note, my fellow hostess Gabby from The Veggie Nook also had a top-clicked upon recipe for her two versions of oatmeal cookies, so she definitely gets an honorable mention here. Gabby is so humble that she didn’t want to be featured, but I am so proud of her and couldn’t resist giving her a little love.

Please remember that we’re trying to focus on whole food ingredients as the overall theme with the minimal use of processed or refined ingredients. I love that this blog party showcases that we can be healthy and vegan and, at the same time, create mouth-watering dishes. Yay for us!

Hey Carrie! Looks like my link got up wrong and the image is not displaying correctly – is there any way you fine ladies can delete it and I will start from scratch? Sorry about that! I hope you can take it down, or that smiley face will continue to shine amongst those beautiful food photos

Hey Carrie, I think something might be up with the way the HVF entries are displayed cause the 5th entry on each line (i.e. #5, 10, 15, etc.) is cut off. I can only see about 1/4 of the picture and can’t see the name at all. If you want to see a screen shot I can email you one.

I’m from Denmark, and my husband and I are on our 5th day of Dr. Fuhrman’s Six-Week-Plan from Eat to Live, after I found his website and read his book, a month before that I turned raw, before that I was on Fit for Life …. My eating habits have keeping changed this year, and I’m so happy about it!
