Healthy Vegan Fridays #3

Happy healthy, vegan Friday!

We ended up with 57 entries for this week!!! Honestly, I have to say, I just love how creative everyone is. Not only from a food perspective, but your photography and writing skills are inspiring and are challenging me to continue improving my work. So, thank you for that. I really do consider this blog party the “best of the best” when it comes to whole food, vegan blogs. By the way, we have a devoted hashtag on Twitter now for our party, it’s #VeganFridays. For this week, Shelby, Gabby and I are each featuring one of the top 3 recipes (as measured by clicks) from last week on our posts. I’m featuring the 3rd most popular recipe, the Quinoa, Chickpea and Zucchini Ribbon Salad presented by VeggieGirl. Congrats, Dianne, this looks delicious and I did a double-take to read that the noodles are indeed made from zucchini and not pasta:

 I was hard pressed to pick some personal faves from last week since they all looked so good, but they would have to be:

Quinoa Basil Bean Burgers with Basil Aioli by Spabettie. I’m sure my version wouldn’t look as pretty as hers, but these burgers just look like great summertime recipe:

Truth be told, I’d probably serve the burgers with Amy’s Pico De Gallo on the side from Amy’s Nutritarian Kitchen. I love that this version uses cabbage which is such a healthy vegetable. It looks like a great accompaniment to just about any dish:

And for a healthy, summertime treat, I’m thinking these Lemon Bars from Sweet & Healthy Living made using garbanzo beans just might entice me to turn on my oven this weekend. In fact, I soaked my garbanzos last night so I’m one step into the process. These bars also have the option to use coconut sugar or a sugar substitute.

Finally, I want to include my submission for this week and that is my Raw Strawberry Tart that I made in July. I know at least in California that strawberries are near the end of the season, so I urge to pick up a few pints from your farmers’ market and enjoy the pure strawberry deliciousness!
