My Thyroid Biopsy & Healthy Vegan Fridays

Good morning and happy Friday! I was absolutely overwhelmed by the support I received from my post on Wednesday. I cannot tell you how much it meant to have your comments, e-mails, Tweets and Facebook messages. It definitely made me feel loved and stronger knowing that you were rooting for me. Up until the last minute while I was in the waiting room at the doctors’ office yesterday, I was reading what you had written to me. Thank you!!!

That being said, I am so happy the biopsy is over with and, like most things, the anticipation was worse than the actual experience. I do have quite the bruise on my neck, but I’ve decided to tell people that Alan gave me a hickey. Ha!

I’m doing my best to not worry about getting the results next week; if anything, this experience is giving me the opportunity to work on not worrying so much about the future and overall feeling more grateful for my health and for how precious life is. And, again, I am overwhelmed by how much support I have felt from you.

I think another round-up of healthy, vegan recipes is in order to wrap up this week! With all of the connections between cancer prevention and diet, why wouldn’t we want to fill our bodies with whole foods that nourish our immune systems? I can tell you that after this experience of wondering whether or not I have cancer plus some of the other health challenges I have had in the past, for me, it’s simply not worth it to take a chance. Bring on the kale!!! :)

Vicky’s Squash Carob Brownies are the perfect example of a health-promoting dessert for a special occasion, or for just when the fancy strikes you:

I actually had the chance to meet Vicky this summer at Dr. Fuhrman’s Getaway in Florida and I can tell you that this girl is going places. She is a brilliantly creative chef and I cannot wait to see where her career takes her.

That being said, I loved all of the recipes that were submitted this week and I continue to be so impressed by the variety and pure scrumptiousness of unprocessed, plant-based foods. Yay for us!

As part of my philosophy to keep it simple, I’m submitting my Creamy Hummus Dressing for this week’s recipe round-up. I wrote about this over a year ago, but it’s one of my favorite salad dressings and it’s so easy to make. I continue to have at least one giant salad per day and, as long as I add plenty of beans, chopped veggies and sometimes some avocado, I find that the salad holds me over just fine until the next meal. We are finally starting to get some clear, sunny weather along the coast in California which means that Alan and I can eat on the patio more. Here is the scene from our lunch yesterday:

How lovely with all the support, you definitely deserve it!
Oh, and you’ve got a hickey :-) Wonderful how you can turn this in to something funny! I love how you work on staying in the moment and appreciate the little things – otherwise we can’t appreciate the big ones.
I love your expression: Bring on the Kale! I think that I’ll take a picture for Instagram with that motto!

Carrie. your upbeat attitude is amazing. Bring on the kale indeed!! Having a positive attitude is winning half the battle and you will continue to be in my thoughts and prayers for a negative result wrt your biopsy. Carrie,
Just found your website through healthy girl’s kitchen and am so happy to find so many great things.

I read this post about your thyroid biopsy. If I may, I can completely relate to your nervousness. I had a partial thyroid lobectomy in 2006 and have nodules and cysts which continue to warrant constant monitoring and subsequent biopsies. Hang in there, you’re right, the waiting is the worst. Best of luck!
