This is now day 10 since my surgery last week and I have my final pathology report news at the end of this post (it’s good!). I haven’t been able to get back to the gym yet, but yesterday morning Alan and I went to the beach to get some fresh air and do some light walking:
Prior to that, I had some leftover green smoothie for breakfast with dehydrated buckwheat groats on top:
My appetite is pretty good overall, but it has definitely diminished since I am not getting my usual amount of exercise.
For lunch, I made some kale salad with a dressing of almond butter, lime juice, dates, soy milk, garlic and onion very similar to this recipe:
I served mine with black rice, steamed asparagus, chopped onion, black beans and edamame:
I was still hungry so for dessert I had two baby apples with some peanut butter:
For dinner, I wasn’t super hungry so I made a big salad with my new favorite salad dressing, my Wild Blueberry Zinger Dressing. I’ve started mixing in raspberries into this dressing along with the blueberries which gives it that pretty pink color. The salad consisted of lettuce, sliced red onions, pistachio nuts, salad dressing, red bell pepper, chopped raw broccoli and a little avocado:
To be honest with you, I couldn’t quite finish the salad. Also, I wanted to mention that I’ve had lots of readers ask me about how many nuts are in an ounce. Just as a guide, I measured one ounce of pistachio nuts so you can see what the amount looks like:

I counted the nuts and there were 44 total. I split that amount between both Alan and me. I’m guess-timating that I probably consume about 2-3 ounces of nuts/seeds a day plus some avocado.
So you might remember that Monday was a big day for me because I had appointments with both my surgeon and my endocrinologist. The surgeon removed my stitches so now I am wearing a silicone patch with paper tape to reduce the scarring. I’m not covering the wounds where the drains were anymore (those are the two dots below the incision). Here’s what I am rocking:
I will hold off on showing you the actual incision for awhile longer since it still looks a bit Frankenstein-ish (my Halloween costume?).
But, what I really wanted to share with you is that my doctors got a second opinion on the pathology of what was removed during surgery and they all agree now that there was NO lymph node involvement with the cancer as was suspected during the surgery. That combined with the fact that the tumor on my thyroid was really small means that I am at a very low risk for recurrence and I do not need the treatment with radioactive iodine now. Yay!!!!!!!!
Obviously, being cancer-free was the whole point of having the surgery so I am grateful and relieved with these results. The only follow-up I need for now is blood level monitoring, ultrasounds and physical exams. My next important appointment is in early December.
My endocrinologist also gave me my prescription for my thyroid replacement medication on Monday. I got bummed when he confirmed that I might have side effects like hair loss, tiredness, and weight gain, but he assured me they should be temporary and I am trying to keep it all in perspective with the bigger picture. I absolutely do think that my lifestyle and excellent diet has helped me recover quickly so far and will continue to aid me during this process. Both of my doctors and several other people in their offices have said that I am doing really well. I even handed out my blog card to my doctor’s assistant because she said she likes to cook healthy meals. I also gave Dr. Fuhrman’s card to my surgeon and I am slowly working on my endocrinologist to go vegan (he is already vegetarian).

Oh miss Carrie! Your meals always look so delicious and vibrant, you inspire me to get back into homemade dressings so I can consume more greens throughout the say. Right now I just eat a large kale-loaded smoothie each day but don’t touch any other greens – I should branch out!

Awesome news! Bummer on the stitches though. I got glued. And just to let you know, I’m as pale as you are (maybe more) and my scar is pretty invisible to everyone now. I know this probably isn’t on the top of your list of cares but I knew it was something that bugged me a lot (people would stare). It took about 8 months for me to not notice it much anymore but it does get better, and so does your energy level.
Thanks for the moral support, Shannon. I never really cared about the scar but it is a little off-putting right now. I’m glad to know that it should get better. I’m still worried about my energy level slowing down but so far it’s okay. Did you lose any of your hair during the adjustment phase?
No, I didn’t lose hair or even have any complications (outside of the hospital, I had the calcium issue too) but I got the exhaustion almost right away and I was quite active before that. It might not really hit you if it hasn’t hit yet, which would be awesome. I would cry I was so tired and had to work a whole 8 hours at my desk, it was rough for a few months there. I wasn’t off work very long since I felt fine but I just didn’t have energy to move much until my meds really balanced things out.

Thanks for the input, Shannon. I’m sorry to hear you had a negative experience. I am very worried about slowing down but I am taking it one day at a time and I plan to let my doctor know ASAP if/when I notice changes. I am almost hyper-sensitive to that point but I know there is going to be some adjustment to my medication and I don’t want to lose time feeling bad if I don’t have to. Remind me, please, when was your surgery? Are you in the clear now? Did you have the iodine treatment?
That’s why I think you aren’t really going to have a bad time at all! Med changes take about 4-6 weeks to level out and I had problems finding the right dose for about 6 months. I had surgery 6 years ago in late Sept. Just keep in contact with your doctor and he’ll be able to help you easily. All clear on my end btw with no iodine, things are smooth sailing and it’s fine just as long as I monitor my energy (like what you are doing). I go for blood tests twice a year still just because I like to keep up on it, but yearly should be fine by now. If something feels up I just send an email and make an appointment, I don’t have the time to feel like crap!

I have had thyroid trouble for years! I was put on meds about 10 years ago and found that they really messed me up. I actually started developing symptoms of an overactive thyroid! About 3 years ago, I came across a doctor who believed that the body was able to bring itself back into balance as long as it had the proper nutrition. In short, I was able to transition off of the medication and onto a kelp supplement, which I still take. I still find myself playing with the dosage, but at least I’m not on the medication anymore! I hope you find what works for you!

I’d be interested in learning more of what you say or do when you talk to people about considering veganism. I could use some help there! It may sound weird, but being vegan is just so much a part of me that I actually don’t know where to begin to explain ALL the benefits and reasons without overwhelming or confusing people. Sometimes I feel so far removed from the omnivore world that I find myself thinking, Really? You don’t already know how bad consuming meat and dairy is for your health, the animals’ health, and the environment?
I also find that it needs to be someone who is receptive to hearing the info or else it’s like talking to a wall…which means I just give up! I do have a friend who has been dabbling in veganism but is now considering going back to fish and eggs, and she asked me for some arguments against doing so. I gave her my ideas but I don’t want to be overly pushy or judgmental (I think that turns people off) but I hope at the very least I gave her some things to think about.
Anyway, future post idea???
Hi Laura, I agree, this could make for a really good blog post except I’m not sure if I have enough good tips just yet. I am just starting to get comfortable with talking to people about it. I have the benefit of having a food blog so I often find myself talking to people about food and then they naturally ask me questions and then I move into the vegan topic. I really like being able to give people something which is one reason I made business cards for my blog. My husband really likes to refer people to Dr. Greger’s Nutritionfacts.org site but I don’t think the respond as well as when I talk about food. As far as talking to my doctors goes, I don’t think they were really listening to me, but I tried anyway (I was telling them about Dr. Fuhrman).
I often have the same feeling you described when talking to omnivores and being really shocked that they aren’t aware of the issues. I guess I just try to take it one person at a time and try to stay very non-judgemental about it. I remind myself that just over 2 years ago, I was eating meat and dairy.
Well hopefully we can trade ideas once we all become more comfortable with it. Thanks for your ideas so far!!!

Hi Gabrielle! They removed the whole gland during my surgery because they weren’t sure if the cancer was elsewhere in the thyroid.

Wow.. I have no idea how I stumbled onto this site but I am in the same boat as you right now with scar, cancer, endocrinologist, no sign in lymph nodes…. Everything!!! I have to have the other half of my thyroid out in 2 weeks… But ever since the first surgery, I have this overwhelming sense of wanting to nurture the dickens out of my body:))) I crave salad all the time.. I took a yoga class tonight for the first time in a long time and cried at the end because I feel like I have let my body down… Something clicked in me that makes me want to feel better….:)))) I wish you well:)

I am on 100 mg/ or mcg of Synthroid right now… I think it is far from regulated as I was on Armour Thyroid for years and was just switched when they found the cancer….my biopsy came back undetermined hence why they only took the half of my thyroid first time… Less is better until they could figure out if nodule was cancerous. I too am not required at this time to have radioactive iodine as my nodule was only .9:)))) I have had all the symptoms you are worried about for so long that they feel normal to me… Sad but true. I take flaxseed tablets to help with my hair as it is thick but I def have spells of big loss!!!! Fatigue… Please, I wrote the book and weight gain, I have accepted my extra 20… Lol… Anyhoo, love the blog and We will chat again soon… Be well:)))
Ick, sorry to hear you have those symptoms. Is your TSH level too high? How come you can’t take more medication to correct the hypo symptoms? I’m just curious…
