July 2, 2013

Between the heat and the upcoming holiday, nobody wants to spend a lot of time in the kitchen, right?

I thought it might be fun to pull together some easy recipes for you to enjoy this upcoming 4th of July.

Here are some of my favorites:

Dr. Fuhrman’s Annual Health Getaway:

Wow, what an incredible experience I have had at Dr. Fuhrman’s Annual Health Getaway this past week. I have tried to share as many pictures and videos as possible on my Instagram and Facebook Page accounts, but words really can’t describe how special it is to be here meeting everyone and feeling part of a health-oriented, motivated community.

It’s going to take a few days for me to process all of the information and inspiration I’ve gotten, but I will be sharing that with you soon. I do have some photos to show now (these were all taken with my iPhone camera, I can’t wait to show you the ones I took with my nicer camera):

Descriptions (clockwise from top left): one of the many breakfast salads I enjoyed this week, a picture from the healthy, vegan buffet line, one of my lunch salads that also included a variety of entrees, and the patio where we ate all of our meals.

Dr. Fuhrman Health Getaway Collage II

Descriptions (clockwise from top left): we had a different green smoothie each morning with breakfast ( I topped this one off with some date-sweetened hemp-almond milk), the beach at Coronado Island,  the Banana Flag Cake served one evening, and a watermelon gazpacho.

And, lastly, my favorite picture of the week because of my gratitude to Dr. Fuhrman for helping me take control of my health:

Dr. Fuhrman and Carrie.

Thank you for reading! Have a wonderful holiday and week, and I’ll be back here on Friday.

What a wonderful post! Thank you for sharing. I’m so happy for you that you got to enjoy, eat lovely/healthy food, be in a beautiful place, and enjoy wonderful company. Fabulous!
I never thought of topping one of my green smoothies with hemp or almond milk or anything like that. It looks pretty and sounds so yummy. Good idea.
Have a Happy Independence Day holiday!

Thanks Patty, that is a great synopsis of what it was like! :)

That burger looks fantastic! I’m always looking for a delicious veggie burger to throw on the grill.

Love the pictures!!! Did Dr. F mention anything about mushrooms? We were eating them like maniacs until the news about their problems came out.

Carrie July 2, 2013 at 11:54 am

What problems with mushrooms are you referring to? He doesn’t recommend eating raw mushrooms, but ones that have been lightly cooked.

Amanda Gayle July 2, 2013 at 3:23 pm

I read a news article last year, about a few studies that said some mushrooms, including the grocery store button variety have carcinogens, but that cooking reduces them a lot. I noticed Dr. Fuhrman now recommends eating only cooked ‘shrooms. That’s okay… we like ‘em better cooked than raw, but we were loving them marinated and in salads. Alas, no more.

How much for Dr. F to cater my meals for a year? He wouldn’t have to put in personal appearances or anything; I’m not picky.

Carrie July 3, 2013 at 6:27 am

Ha ha, I’d be interested in that, too! :)

Sounds like you had a great time on the Immersion Excursion. What a wonderful experience. I hope to be able to go sometime. Thanks for sharing your photos and recipes!

Yum, they all look wonderful! Want to try the gelato!

Sandra July 5, 2013 at 8:33 am

Would like to try the Gelato, too (safely pinned!) I know, I know, it would be so much easier if I had your delish app :-) I’m such a dinosaur when it comes to mobile phones. I will get round to it soo, promise!

What a fab health getaway! It must have been great to speak to Dr. Fuhrman in person (and get a photo with him :-) )

I’d love to go to an event like that next year. Out of all the foodie & health blog events next year, if you could attend only one – which one would it be?

I’d love to go to more than one, but flying over from the UK is such a big mission. So I can probably only do one thing. And I’d love to pick something epic if I can ;-) Just wondering what your views are…

Carrie July 7, 2013 at 4:50 pm

Hi Sandra! Gosh, I have to say that the annual Getaway is my favorite event. It’s a combination of health lectures and fun with plenty of time to meet everyone. Dr. Fuhrman also does weekend immersions throughout the year, but the annual Getaway each summer is a very, very special experience. I would describe it as epic. :)

Sandra July 8, 2013 at 11:57 am

Thanks Carrie, that sounds very enjoyable indeed. I’ll tentatively pencil it in my diary :)

Andrea July 5, 2013 at 4:10 pm

I was invited to a family 4th of July gathering in North Carolina – home of the tasty deep fried everything. I brought along two of the salads from your app and they both were a big hit. The summer quinoa and lentil (minus the lentils because I tried to use red lentils which I found out turn to mush) and the creamed kale. Thanks!!

Carrie July 7, 2013 at 4:47 pm

Awwww, thanks for letting me know, Andrea! It means so much to me that you enjoyed the dishes. :)
