Photo Food Journal & Black Bean Tempeh Burgers

October 30, 2013

Is it just me or does it feel like we’ve fast-forwarded into fall and the busy-ness of the upcoming holiday season already? I’ve been doing some serious multi-tasking lately, but it’s all good stuff including filling out my master’s degree eligibility form so I get my degree in February, 2014, getting ready to go to the Healthy Taste of LA this upcoming weekend where Dr. Neal Barnard will be speaking (SO excited), and organizing some upcoming giveaways with fellow bloggers for my recipe app, Vegan Delish.

BTW, I’ve recently created a new category in the app for Holiday Recipes. I’ll be adding more recipes to this category over the next few weeks, so keep checking it (download the app on your iPhone or iPad here):

Holiday recipes in Vegan Delish

Since today is “What I Ate Wednesday,” I’m sharing a day’s worth of healthy, vegan eats (see my previous Photo Food Journal posts here).

Yesterday’s morning started with a Choco-Pear Smoothie bowl topped with cocoa powder, dehydrated raw buckwheat groats, and cacao nibs:

I’m loving this new herbal tea I picked up from Trader Joe’s (the fox illustration on the front reminds me of my blogger friend Ashlee):

Lunch was my Jalapeño Black Bean Hummus in a brown rice wrap topped with shredded carrot and chopped celery:

Dessert was one of my favorite fruits of all times that I was thrilled to finally see arrive at the farmers’ market…persimmon!!!

On a side note, I took a picture of my kitchen counter to give you an idea of how much fruit I usually have on rotation (you can see pomegranates, avos, pears, kiwi, persimmons, cucumbers, oranges, and mangoes hiding behind the plant):

For dinner, I decided to get all crazy and try making vegan burgers using tempeh. I was originally inspired by JL who did this a long time ago. I personally adore tempeh and can literally eat it right out of the package, but my husband Alan isn’t a huge fan of eating it that way. This is the brand I like [Editor's note: the brand is called Lightlife]:

Making the burgers is super easy, I just threw the tempeh, mushrooms, beans, tomato sauce, and spices into the food processor:

Making tempeh burgers Here is the recipe:

Black Bean Tempeh Burgers
Recipe type: Main Dish
  • 1 8-ounce package tempeh
  • 1 cup mushrooms (any type)
  • ½ cup black beans, rinsed and drained
  • 2 teaspoons low-sodium tamari or soy sauce
  • ¼ teaspoon garlic powder
  • ¼ cup tomato sauce
  • 1 tablespoon dried onion
  • 1 teaspoon red pepper flakes
  • ¼ teaspoon ground mustard seed
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ¼ teaspoon dried thyme
  • 1 tablespoon flax meal (ground flax seed)
  1. Preheat oven to 375° F.
  2. Chop mushrooms roughly and place into the bowl of a food processor. Remove the tempeh from the package, using your hands to break it into large chunks and placing into the food processor.
  3. Add the tamari, garlic powder, tomato sauce, dried onion, red pepper flakes, ground mustard seeds, smoked paprika, ground cumin, dried thyme, and flax meal to the food processor. Turn on high and process until the ingredients are combined.
  4. Use a spatula to transfer the mixture into a medium bowl. Use your hands to form the mixture into six patties. Place on a parchment-lined baking sheet and bake at 375°F for 40 minutes total, flipping once during cooking. Serve hot.

I loved how the burgers turned out and Alan did, too. I served mine on top of lettuce and with a roasted sweet potato:

Dessert was a dish of my Slow-Cooker Applesauce (unpictured, sorry).

That’s it! It’s been really nice to get back into the kitchen after a week of eating restaurant food in NYC. I find that even when I can track down reasonably healthy food while traveling, nothing compares to preparing my own food at home in terms of the quality of ingredients and making it exactly how I want it.

Even though my regular blog schedule is Mondays, Wednesdays, and Fridays, I have a very special post for you tomorrow with a new giveaway that I think you are going to LOVE! See you soon.

I’ve got hold of persimmons the last few weeks, excited to see them back, they are definitely my favourite! Those burgers look delicious!

Do you like the Hachiya, too? I loooooover both the Fuyu and the Hachiya.

Suzanne @ hello, veggy! October 30, 2013 at 5:14 am

Thos burgers look fab; I LOVE tempeh. Also, that is a very impressive assortment of fruit! Is it all local to your area?

Carrie October 30, 2013 at 7:49 pm

Thanks, Suzanne! Yes, I am so spoiled, I can get all of those fruits locally, except for the mangoes which come from Brazil. That said, sometimes I can’t get to the farmers’ market so I buy at Costco. :)

Nezumi October 30, 2013 at 9:16 am

I love overflowing fruits bowls! I can’t wait to find persimmons.
That tempeh burger is looking good! Love that hummus wrap too.

You have no idea how excited I was so see the tempeh burgers! I just bought the exact kind pictured last night for the first time but wasn’t sure what to do with it! This looks delish! Thank you!!

Carrie October 30, 2013 at 7:47 pm

GREAT! Let me know how you like the burgers, Jessie! :)

Laura S. October 30, 2013 at 12:47 pm

I agree about your note in the conclusion. I get so excited when I go to a vegan restaurant or am at a restaurant featuring vegan items, and though I’d say I’m not usually disappointed, I still do find that I say to myself, Hmmm, I would have put a little more of this or a lot less of that if I were to make this dish. Never would I have thought I’d be more excited to cook at home than eat out!

Brittany @ The Fit Phoenician October 30, 2013 at 1:39 pm

Blackbean hummus looks great- I love pureeing a can of black beans to add to anything! Those burgers look delish!! I’ll have to try them.

Emma October 30, 2013 at 3:54 pm

I looked for persimmons today but couldn’t find any sadly :( I’m going to keep my eyes peeled.
I’m a tempeh lover too so I bet I’d enjoy those burgers.
P.S. Downloaded the app today! Fabulous!

Carrie October 30, 2013 at 7:47 pm

Thanks Emma!!! Is it hard to find tempeh in the U.K.?

Emma November 1, 2013 at 3:55 am

Fortunately my local health food store carries it but no it’s not really widely available, only in health food stores and big places like Whole Foods :(

Yummmmmm…… I LOVE a good burger, and that blackbean and jalapeno hummus sounds like a winner. Robyn xx

Ashlee October 31, 2013 at 1:20 pm

YUM! I have a recent love affair with tempeh after denying it for too long, and those burgers are looking BALLER. And, hey, thanks for the shout out of my blog, woman. That foxy tea is nice, isn’t it? Kinda apple-y and chai-like (new words). Trader Joe’s always has the most bewitching stuff. Their candy cane tea is one of my FLAVORITES. XO

Carrie October 31, 2013 at 1:57 pm

Hiya Ashlee and you’re welcome for the shout-out. I bought the tea ‘cuz the cute little fox was too much to resist and now I’m in love with the flavor. Ohhhh, I have not yet tried the Candy Cane one but I’m adding it to my shopping list! You’re my FLAVORITE! :)

Donna November 3, 2013 at 3:36 pm

Featured foods looks delicious! Love all of your photos…better go and make a delicious lunch now…!

Jackie November 4, 2013 at 5:48 pm

Hi Carrie! I’m excited to make your tempeh burgers this coming weekend. They look great and it’ll be a perfect excuse for me to finally try making Fuhrman’s healthy ketchup recipe to go with it. By the way, is that tea from TJ’s a spice tea? The illustration on the box alone makes me want to buy it ;)

Carrie November 5, 2013 at 5:40 am

Hi Jackie! Great, let me know what you think of the tempeh burgers. Homemade healthy ketchup sounds fantastic, although I kinda think they don’t need a topping. :) The TJ’s tea is definitely an herbal spice tea. I noted the ingredients label said natural apple and cinnamon flavoring, though, so I’m not really sure what that means (aka “natural” or not?).

Gail November 8, 2013 at 3:41 pm

Hi Carrie,
Made these burgers this week & they have to be among my favourite veggie burgers ever, both bought & made…….plus, they were so easy to make! Many kudos to you!

Carrie November 9, 2013 at 9:47 am

I’m so happy to hear that, Gail! Your kind words just made my day. :)

kimmythevegan November 8, 2013 at 7:38 pm
